Congrats to Abbey & Travis!

Keith and I spent last weekend in Leesburg, Virginia celebrating the wedding of Abbey and Travis.

We arrived on Friday just in time for the rehearsal and dinner. On Saturday Keith went to the Dulles Air & Space Museum and the Maserati dealership (typical) while the girls spent the day primping.
Abbey didn't feel well due to a cold, but she looked absolutely radiant!

The wedding and reception were held in an old bank that has been converted into a restaurant. It was so intimate and historic.

It was so fun to spend time with good law school friends that I don't get to see enough.Abbey and Travis are spending the week in the Dominican Republic.

Congrats to the newlyweds!

Celebrations!

Keith and I are headed north for a few days. First, we'll be in Virginia partaking in the wedding festivities of Abbey and Travis. Then we're headed to D.C. for a couple of days for a belated 2 year anniversary trip.

We'll be back next week... with lots of pictures!

Sunday afternoon Keith and I tackled the leaves that have taken over our backyard. We had a great helper...

Carrie Underwood!

Carrie Underwood performed in Nashville on Wednesday and she was amazing. Seeing her live only emphasized how incredibly talented she is. When she sang a combination of "Jesus Take The Wheel" and "How Great Thou Art" I had chills.

Billy Currington of "I've Got a Feeling," "People are Crazy," and "Good Directions" fame was her opening act.

Yard Update

Our landscaping was begging for some attention. The past couple of weekends have been devoted to visiting nurseries, digging out stumps, planting bushes and flowers, trimming, and watering. Next up: mulching!

Peanut Butter Banana Bread

Two things we can't get enough of around our house: Cooking Light recipes and peanut butter/banana anything (obvious since this is my second peanut butter/banana post 2 weeks). It just so happens that the cover of the October issue of Cooking Light is peanut butter banana bread. Of course, I made some. I recommend you do the same!

Peanut Butter Banana Bread (Cooking Light, Oct. 2010)

Ingredients

Bread:
1 1/2 cups mashed ripe banana
1/3 cup plain fat-free yogurt
1/3 cup creamy peanut butter
3 tablespoons butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup packed brown sugar
6.75 ounces all-purpose flour (about 1 1/2 cups)
1/4 cup ground flaxseed
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
2 tablespoons chopped dry-roasted peanuts
Cooking spray

Glaze:
1/3 cup powdered sugar
1 tablespoon 1% low-fat milk
1 tablespoon creamy peanut butter

Preparation

1. Preheat oven to 350°.
2. To prepare bread, combine first 5 ingredients in a large bowl; beat with a mixer at medium speed.
3. Add granulated and brown sugars; beat until blended.
4. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through allspice) in a small bowl.
5. Add flour mixture to banana mixture; beat just until blended.
6. Stir in nuts.
7. Pour batter into a 9 x 5-inch loaf pan coated with cooking spray.
8. Bake at 350° for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; cool.
9. To prepare glaze, combine powdered sugar, milk, and 1 tablespoon peanut butter in a small bowl, stirring with a whisk. Drizzle glaze over bread.
