Puppies and Pure Barre!

So these two things have nothing to do with each other except that they've occupied my time lately. Or at least Pure Barre has. The puppies are just a pleasant distraction on the weekends.

Just what am I talking about? Well, there's a workout phenomenon called Pure Barre and I've just jumped on the bandwagon. I have a love/hate relationship with Pure Barre. I hate every minute of the 55 minute class which is "a total body workout that lifts your seat, tones your thighs and burns fat in record-breaking time." I love it when I leave though and can't wait until the next class.

And the puppies? Aimee is fostering 4 precious puppies and their sweet mom. Can you believe someone threw these cuties in a dumpster? They're so wiggly and cuddly and deserve a great home!

Darcy turns 4!

I can't even believe it, but Darcy is 4 today! (We've had her 3 years and she was estimated to be about a year old when we adopted her.) Saturday the weather was perfect and we had a family party at the park complete with cupcakes for the dogs and the dog owners. Darcy loved her cupcake and tried to eat it whole.
(She is getting her spring haircut this week so she'll be losing the "bear" look soon.)Oscar, Pappy and Jack liked theirs too.Happy Birthday, Darc!

2.5 and a new recipe

Lately, there hasn't been much cooking at our house. We've been kinda busy, okay? :) But yesterday was our 2.5 year anniversary and we decided to celebrate with a home cooked meal. I made stuffed zucchini and Keith made couscous. It was pretty tasty.

Stuffed Zucchini
Ingredients
  • 2 zucchini
  • 3 tablespoons olive oil
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1/2 cup chopped mushrooms
  • 1 pound ground turkey
  • 2 diced tomatoes
  • 3 tablespoons chopped fresh basil
  • 1 teaspoon chopped fresh rosemary
  • 3/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 teaspoons salt
  • 2 teaspoons pepper
Directions

1 Cut zucchini in half lengthwise. Scoop out insides, leaving shells about 1/4 inch thick. Reserve about half of the insides.

2 Heat 2 Tbsp of olive oil in a skillet on medium high heat. Sauté onion and garlic until soft. Add mushrooms and reserved zucchini insides, and sauté another 2 minutes.

3 In a separate skillet heat a Tbsp of olive oil on medium high heat. Add the ground turkey and lightly brown. Stir in the onion and mushroom mixture from the other pan. Stir in tomato, basil and rosemary and cook 1 minute longer. Drain any excess fat. Remove mixture from heat and set it aside.

4 When mixture has cooled, add cheese, egg, salt and pepper. Fill zucchini shells with mixture. Fill a baking pan with 1/4 inch of water. Place filled zucchini halves in pan and bake at 375 degrees for 40 minutes, until golden brown. Remove zucchini from pan and serve while hot.

Grand Ole Opry

I've been inspired by others and have started a "30 before 30" list.* One of the items on my list is to be a tourist in my own town. I feel like I'm doing pretty well on that one. Keith and I recently added the Grand Ole Opry to the places we've been in Nashville. The show was so eclectic. There were old school country acts like Marty Stuart, Little Jimmy Dickens and Bill Anderson. Country music icons like Vince Gill and Allison Kraus. And Crystal Bowersox from American Idol. It was a different and fun date night.
*I haven't decided if I'm going to post my list.
Reason 1: I don't have 30 things yet.
Reason 2: If I post it, I'm going to feel accountable, and I don't know if I'm ready for that kind of pressure :)
