Bye Cammy

Last night we put my car on craigslist to gauge interest. Tonight we sold her.

I hope that the new owner has as many wonderful memories as I do from the 7 1/2 years Cammy and I spent together.

We Won!

A few weeks ago Keith and I entered a short story about Darcy (based on this post) into a contest held by local dog photographer Adrian Hitt. You may recognize that name from the session she recently did with Aimee, Nick, and Jack. We found out last week that we are the winners and recipients of a photo session with Adrian! Thanks for being so adorable and mischievous, Darc!

Peanut Butter Banana Cream Pie

My husband is a big fan of peanut butter desserts. Lucky for him, I recently came across a recipe for a pie that looked easy and delicious. We ate the entire thing in 3 days if that tells you anything.Peanut Butter Banana Cream Pie (from www.eat-drink-smile.com)
Ingredients:

Crust:
1 cup vanilla wafer cookies (about 20 cookies)
1/3 cup packed brown sugar
2 1/2 Tbsp butter, melted
Cooking spray

Filling:
3/4 cup packed brown sugar
1/2 cup (4 oz) 1/3 less fat cream cheese
1/2 cup reduced fat peanut butter
1/2 tsp vanilla extract
1 (8 oz) container frozen fat free whipped topping, thawed
1 large banana, sliced (enough to cover bottom of crust)
chocolate syrup

Directions:

Preheat oven to 350°. Place cookies in a food processor; process until finely ground. Add 1/3 cup brown sugar and butter; pulse 2 to 3 times or just until combined. Press crumb mixture into bottom and up sides of a 9-inch pie plate coated with cooking spray. Bake at 350° for 10 minutes; cool completely on a wire rack.

Place 3/4 cup brown sugar, cream cheese, peanut butter, and vanilla in a mixing bowl, beat with a mixer at medium speed until smooth. Fold in whipped topping. Arrange banana in bottom of crust. Spread peanut butter mixture over banana; drizzle with chocolate syrup. Cover and freeze 8 hours, let stand at room temperature 15 minutes before serving.

Enjoy!!
